Hard-anodized surfaces resist abrasion and corrosion, so you don’t have to worry about metal utensils scraping the surface, as you would with a nonstick pan. Hard-anodized pan is the most durable pan you can buy.

Anodized materials have an extremely long life span. Anodized surfaces do not chip or peel so you will never end up eating pan bits. It is nontoxic.
Most important for cookware, hard-anodizing makes cookware surfaces so smooth that they are stick-resistant.

I use caphalon cookware and its amazing. It heats everything up evenly in the pot/pan no matter where it sits on the burner (i also have an electric stove) and I have NEVER had to scrub a pot or pan. All food, even burnt or dried wipes right out. They are a little more pricey but well worth it!

I thought stainless steel isn't supposed to rust. Most recently, I discovered the inside of my "stainlesss steel" KitchenAid kettle, was rusting. This doesn't make any sense. So does this mean that the manufacturer is lying about the metal composition of the kettle? If so, what are my options? The warranty was up many years ago. Isn't the consumption of rust, which is inevitable if you are using cookware that has rust on it, a health hazard? I've noticed that many "stainless steel" cookware items tend to rust after a while. I know when I was growing up, stainless steel meant no rusting. What has happened in the last decade to our cooking ware? And what are the health consequences of consuming rust in our foods?

overtime the coating on the stainless wears and allows the metal to oxodize

Can you give me your opinion of which cookware set is best and why?

I want to buy a cookware set for a Christmas present. I am looking at Cuisenart, KitchenAid, and Rachel Ray expecially. I want a set that is above all durable. I also need a set with good sized pots, as this will be used by a family of 5. Which cookware do you suggest?

Here is what consumer reports recommends:

Quality cookware isn’t about price or celebrity-chef endorsements. Our tests found good performers at all price levels for both nonstick and uncoated cookware. Indeed the best performer overall was a $150, 14-piece set from Costco. We think most everyday cooks will do well with a set of nonstick cookware that includes the basic saucepans and skillets and a stockpot. If you want to whip the potatoes in the pot you’ve cooked them in, make a smooth roux or delicate sauce, or deglaze carmelized bits in a frying pan to add flavor to meat, you can supplement the nonstick set with a couple of pieces of uncoated cookware.

The Ratings rank models by overall performance. Quick Picks takes other factors into account, including value and versatility.

Quick Picks

Best value in a nonstick set:
Kirkland Signature (Costco) $150,
CR Best Buy
A generous set with 14 pieces of anodized aluminum. Cooking was very even, and the nonstick surface was very durable. Safe, sturdy, comfortable handles. Easy to clean (though dirt does collect around handle rivets, which is typical). But not dishwasher safe. Not available as open stock.

Best value in an uncoated set:
Member’s Mark (Sam’s Club) $130
This 11-piece stainless-steel over aluminum set includes a small-diameter frying pan and a steamer. Mirrorlike finish makes the set look more expensive than it is. Cooking was very even. The handles are safe and comfortable, but they could be sturdier. Dishwasher safe. Cleaning fairly easy for an uncoated set. Not available as open stock.

If you want a bit of both in one set:
Calphalon $150
The eight pieces of stainless steel over aluminum include uncoated saucepans and large and small nonstick frying pans with glass lids. Set scored excellent for evenness of heating, and the coating performed reasonably well in our test of nonstick durability. Handles could be sturdier, but they are safe and comfortable. Cleaning the uncoated pieces requires some elbow grease, but all components except the frying pans are dishwasher safe. Some cooks may want to add an uncoated skillet to round out the set. If you’re the absent-minded type, note that this was one of the sets that oozed molten metal in our empty pot/hot burner test (see Avoid cooking accidents).

If your cooktop is an induction model:
KitchenAid $150
The 10-piece set of uncoated stainless steel over aluminum will work on an induction cooktop and can go in the dishwasher afterward. Silicone rubber handles are ovenproof and comfortable, but they could be sturdier. Typically, handle rivets collect dirt.

Best value if your budget is tight:
Bialetti $50
This inexpensive nine-piece nonstick set cooked very evenly. The handles aren’t particularly strong, but they’re comfortable to hold and stayed fairly cool during cooking. This was also the lightest cookware set we tested, despite its glass lids.

Cuisinart – $110

KitchenAid – Rubber handles limit oven temps to 400 degrees. – $120

Emerilware(made by All-Clad) – Glass lids. Stylish copper clad base. – $170

I'd like to know what direction you cooks who are familiar with multi-ply stainless cookware think I should go.

Go with the Cuisinart.
Stylish copper base ( got one) looks crappy after you use it, it needs to be polished ( don't have the time) the Kitchen Aid with the Rubber Handles you have to watch in the oven ( don't have time for that either). Buy a good heavy set that doesn't cost the world like Cuisinart.
Happy Cooking!

I am trying to decide what kind of cookware set to buy.
Try Home Shopping Network (www.hsn.com). They sell great cookware sets. I have the Wolfgang Puck Stainless Steel set and they are wonderful! I also highly recommend Cuisinart, Oster or Command Performance. They do have smaller sets that are within your price range so you can always get the basics and add to it. However, once you get a good cookware set, it should last you awhile so it's worth the money. Especially if you cook often.
